Curried Stir-Fried American Lamb

3/4 pound boneless American lamb, fresh, sliced into 1/8-inch strips
2 tablespoons oil, seperated
1 small onion, chopped
2 cloves garlic, minced
1 small red apple, unpeeled and diced
1/2 cup green pepper, diced
1/2 cup celery, thinly sliced
1/4 cup water chestnuts, optional
6 ounces snow peas, frozen or fresh
1 teaspoon fresh ginger, minced (or 1/4 tsp. powdered ginger)
1 teaspoon cornstarch
1 tablespoon light soy sauce
1/4 teaspoon curry powder

Heat 1 tablespoon oil to medium hot, add garlic and sauté briefly, add onions and lamb and stir and fry for about 2 to 3 minutes or until lamb is no longer pink. Remove from wok, and keep warm. Add remaining tablespoon of oil to wok and heat to medium; add apples, peppers, celery, water chestnuts, snow peas and ginger. Stir and fry until crisp tender. Return lamb mixture to wok and cook until the mixture is hot and well blended. In a small bowl combine cornstarch, soy sauce, broth and curry powder. Add to lamb mixture, stirring constantly until thickened and meat and vegetables are glazed. Serve over rice.
