6 - 8 large tart apple
Pastry for 2-crust 9-inch pie
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
2 tablespoons flour
1/2 teaspoon nutmeg
1 lemon, grated peel
1 orange, grated peel
3 tablespoons butter or margarine

Preheat oven to 425 degrees. Pare and core apples; cut into quarters; slice thin. Line 9-inch pan with pastry. Combine sugars, flour and nutmeg; rub a litle of this mixture into pastry. Add orange and lemon peels to remaining sugar mixture. Arrange apples in pie pan, sprinkling each layer with some of the sugar mixture. Dot with butter or margarine. Cut remaining pastry into strips 10 inches long and 1/2-inch wide. Weave, lattice fashion, over pie filling. Trim and crimp edges. Bake for 30 minutes. Lower temperature to 325 degrees and bake for additional 20 to 25 minutes, or until apples are tender. Let cool.

Optional: Brush top with thin confectioners' sugar icing; decorate with chopped candied orange peel and chopped glace cherries.
