Pan Roasted Lamb with Winter Vegetables
A great tasting roast for the whole family to enjoy.

1/2 leg American lamb leg, (4-5 pounds)
1 Tablespoon fennel seeds
1 teaspoon minced garlic
2 teaspoon finely shredded lemon peel
1 teaspoon salt
1/2 teaspoon pepper




Crush or finely chop fennel seeds. Combine seeds, garlic, lemon peel, salt and pepper; mix well. Rub fennel mixture into outside of lamb roast. Place on rack in roasting pan. Roast at 325° F for 1¼ to 1½ hours or until inside temperature is 145 degrees to 150 degrees. Remove, cover loosely with foil. Let stand 10 minutes. Slice and serve with roasted winter vegetables.
