Christmas Yorkshire Pudding

2 eggs
1 cup milk
1 cup all-purpose flour
1/2 teaspoon salt
4 tablespoons unsalted butter

Heat the oven to 425°F.
Beat the eggs and milk in a medium bowl with a fork or whisk.
Stir the flour and salt in a medium bowl.  Stir in the egg mixture.
Place the butter into an oven-safe 2-quart shallow baking pan.  Heat the pan in the oven for 10 minutes or until the butter is melted.  Pour the batter into the hot pan.
Bake for 25 minutes or until the pudding is puffed and golden brown.  Do not open the oven during the first 20 minutes of the baking time.
Recipe Note: Traditionally, Yorkshire pudding is made with pan juices from the roast beef instead of butter. You can choose to do this, if you wish. The flavor is remarkable!
