1 7 pound leg of lamb
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon dried oregano, ground
1/2 teaspoon garlic powder

Preheat oven to 325 degrees. Sprinkle lamb with salt, pepper and oregano. Place on rack in shallow roasting pan. Roast 25 minutes per pound, or until thermometer registers 150 degrees for medium rare and 160 degrees for medium. Allow lamb to rest 20 minutes before carving.
