Avocado Sunrise Omelet
A quick and delicious breakfast or brunch treat, this omelet is equally good as a light supper.

8 eggs
1 scallion, thinly sliced
1 cup fresh sliced mushrooms
1 avocado, seeded, peeled and diced
1/2 cup shredded Cheddar cheese

Beat the eggs with a fork until light and lemon colored.

Stir in the green onions, mushrooms, and avocado and season to taste with salt and pepper.

Pour the egg mixture into a greased 12-inch skillet and cook over medium heat until the bottom of omelet sets.

Flip the omelet over in the pan and slide onto a warm plate. Sprinkle the top with cheese.

Cut into pie-shaped wedges and serve.
