Sweet Onion and Roast Beef Sandwich
Sandwiches are so easy to make, you may think you don't need a recipe. You really don't, but this one might give you some ideas for making an ordinary sandwich special.

8 slices rye bread
1/2 cup mayonnaise, mixed with chopped fresh herbs, such as thyme or chives
2 ripe tomatoes, sliced
1 large Vidalia onion, or other sweet onions, sliced
1 pound rare, cooked roast beef, sliced
salt and pepper, to taste

Lightly toast the bread. Spread the toast with the herbed mayonnaise and then top one slice with tomato slices and a few rings of onion.

Lay the roast beef on top of the onion. Season to taste with salt and pepper.

Sandwich the other slice of toast on top, press gently, and slice in half. Repeat to make 3 more sandwiches. Serve immediately.
