Oyster Roll

1 large package (8 oz.) cream cheese
1 tablespoon mayonnaise
1 can (3 3/4 oz.) oysters, smoked
Parsley, finely chopped
Dash red pepper, (optional)

Soften cream cheese, mix with mayonnaise and spread mixture to edges of a piece of wax papper (8" x 11"). Place paper on a cookie sheet and refrigerate for at least 6 hours. Drain and finely chop the oysters. Remove cream cheese from refrigerator and keep at room temperature about 15 minutes. Then carefully spread chopped oysters over the cream cheese and roll in jelly-roll fashion starting on the long side. You may use a spatula to help; but once started, it is fairly easy. Serve immediately or rewrap and refrigerate for 24 hours. Decorate with parsley and a little red pepper if desired. Slice and serve with crackers or toast rounds.
