1 1/2 pounds carrots, cut into 1/2-inch rounds
1 medium onion
1 tablespoon unsalted butter
1 teaspoon salt
1/4 teaspoon white pepper, freshly ground
2 bay leaves
1 sprig thyme, fresh

Preheat oven to 375 degrees.Combine all the ingredients in a small heavy lidded pot and place in the oven for 1 1/4 hours, until the carrots fall apart.

Remove the pot from the oven and retrieve and discard the bay leaves and the thyme sprig, if using. Pour the contents of the pot into a food processor and puree until smooth. Or place the contents in a mixing bowl and mash well. Keep warm until ready to serve.
