Butterscotch Topping
A butterscotch is often just what the doctor ordered.
Serves: makes 2 cups
Prep Time: 5 minutes
Cook Time: 4 minutes


1 cup packed brown sugar
1/2 cup dark corn syrup
1/2 cup heavy cream
4 tablespoons butter or margarine
5 tablespoons coffee liqueur, optional

Combine the sugar, corn syrup, cream and butter in a 4-cup glass measuring cup. Microwave on High (100 percent) for 3 to 3 1/2 minutes until the mixture boils, stirring after 2 minutes.Cover wir Stir in the coffee liqueur if used.Cover the sauce with plastic wrap and store it in the refrigerator.
