Neha's Mommy's Red Lentils and Rice
Lentils are not just for soup!
Serves: 4
Prep Time: 10 minutes
Cook Time: 24 minutes


1/4 teaspoon cumin seeds
3 whole cloves
1 teaspoon tumeric
1 onion
1 tablespoon olive oil
1 cup red lentils
2 cups water, cold
1/4 teaspoon cinnamon, ground

Have the children place the cumin seeds and cloves in a medium skillet. Then adults can toast the spices over medium heat for 2 to 3 minutes. Let the children measure and add the turmeric into the spices with a long spoon.

Meanwhile, older children can help chop the onion. In a medium pot, heat the olive oil over medium heat and add the onion. Cook the onion until translucent, stirring occasionally, about 10 minutes.

Then let the children measure and add the red lentils, water and toasted spices to the onion and cook until a sauce is formed, about 15 minutes. Season with salt and cinnamon to taste. Serve with basmati rice.
