Sugar Cookies

1 cup unsalted butter
1 cup sugar
1 large egg
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar

Preheat the oven to 375 degrees F.
Cream the butter and sugar in an electric mixer fitted with the paddle attachment and set on medium-high speed, 4 to 5 minutes. Add the egg and vanilla and mix to blend.
Sift together the flour, baking soda and cream of tartar and using a rubber spatula or with the mixer set on low speed, blend the flour mixture with the cookie dough.
Roll the dough into small balls and place (far apart) on an ungreased cookie sheets. Dip the bottom of a drinking glass in sugar and use it to flatten dough into thin, round cookies and to press some sugar into the top of each cookie. Bake for 10 to 12 minutes or until the cookies start to brown around the edges. Remove from the cookie sheets while hot and allow the cookies to cool on brown paper.
