Apple Bacon Popovers

2 large eggs
2 large egg whites
2 cups 1 percent milk
2 cups all-purpose flour
2 teaspoons sugar
1 teaspoon salt
2 strips turkey bacon
1 large apple
1 tablespoon melted light, unsalted butter
Cooking spray
Apple butter, optional

In a large bowl, whisk together the eggs and egg whites until well blended. Whisk in the milk.

In a medium bowl, whisk together the flour, sugar and salt. Gradually add the  dry ingredients to the egg mixture, whisking well to thoroughly incorporate. Let the batter stand at room temperature for about 30 minutes.

Preheat the oven to 450°F. Coat a 9-cup popover pan or muffin tin with vegetable cooking spray.

While the batter is resting, cook the bacon strips until crispy. Drain, let cool, and finely chop. Coarsely grate the apple, including the peel.

Fold the bacon, grated apple, and melted butter into the batter, stirring until well blended. Pour the batter into the prepared popover cups until 3/4 full. Bake for 18 minutes. Reduce the heat to 325°F. and bake for 10 minutes more. Serve immediately with apple butter, if desired.
