Kiwi Chicken
This unique dish is great for those who enjoy a little fruit flavor with their poultry.

2 whole broiler-fryer chicken
flour
salt, to taste
white pepper, to taste
oil
white wine
4 whole garlic cloves
4 kiwi fruit
chopped parsley




Quarter the chicken and dredge in flour, salt and pepper to taste. Saute the chicken in hot oil until golden brown, then layer in a Dutch oven.
Pour enough wine over the chicken to cover. Crush the garlic cloves with the flat part of a knife and place around the chicken.
Peel and slice kiwi and arrange around the chicken. Cover and bake in a 350-degree Dutch over for 1 hour or until chicken is tender. Sprinkle with chopped parsley and serve from the Dutch oven, spooning the juice over the chicken.
The cooking time and temperature reflect cooking at a high altitude. Adjustments may be needed.
