8 large Yukon gold potatoes
2 large onions
2 slightly beaten eggs
1/2 cup matzo meal
4 garlic cloves, peeled and chopped
1 small green pepper, chopped in small pieces
1 small red pepper, chopped in small pieces
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 350 degrees. Grease 9x13-inch pan. Thinly slice potatoes and onions in food processor. Place potato mixture in large mixing bowl and add the rest of the ingredients (when time is short chop everything in food processor), mix and pour into pan. Bake uncovered for 1 hour.
