1 1/4 pounds ground turkey
1 tablespoon olive oil, optional
2 teaspoons Italian seasoning
salt
freshly ground pepper
4 slices mozzarella cheese, low-fat
8 slices Italian or French bread crumbs
olive oil, for brushing bread
1 cup marinara sauce

Heat the broiler or light the charcoal grill. Let the coals get medium hot.

In a medium-sized bowl, combine the turkey, the tablespoon of olive oil, Italian seasoning and season with salt and pepper. Shape the mixture into 4 patties about 3/4-inch thick.

Cook the turkey burgers in the broiler or on a lightly oiled grill, about 5 inches from the heat, if possible, turning once, for 4 to 5 minutes. Top each burger with a slice of cheese and continue cooking for another 4 to 5 minutes until the cheese is melted and the burgers are done but still juicy.

While the turkey burgers are cooking, grill or toast the bread slices, turning once, until lightly toasted. Brush one side of each grilled slice with olive oil.

Serve the turkey burgers immediately with some of the warm marinara sauce on the toasted bread slices.
