Light vegetable oil cooking spray
2 cups (about 2 apples) McIntosh apples, peeled and sliced
8 cups (about 8 apples) Jonathan apples, peeled and sliced
1 1/4 cups sugar
1/4 cup all-purpose flour
1/4 teaspoon nutmeg, grated
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon lemon juice, freshly squeezed
1 recipe buttermilk biscuits, prepare up to rolling out the dough

Preheat the oven to 375 degrees.
Spray a 13x9x1 1/2-inch baking dish once lightly with vegetable oil spray and spread the oil evenly over the surface. Combine the apples, flour, spices, and lemon juice in a large bowl. Mix thoroughly and transfer the mixture to the baking dish. On a lightly floured work surface, roll out and shape the biscuit dough into a 13x9-inch rectangle. Place over the baking dish, crimping the dough to the edges. Cut 6 to 8 slits across the top with a sharp knife. Bake 35 to 40 minutes, until the crust is brown and the filling is bubbly
