Fresh Strawberry Tart

1 cup skim milk
1/2 cup nonfat liquid egg substitute
3 tablespoons sugar
1 tablespoon orange juice, freshly squeezed
1 Phyllo Crust, prepared and baked (see our recipe)
2 pints strawberries, hulled and washed
1/3 cup red currant jelly

Warm the milk in a small saucepan over low heat just until it begins to give off steam. Remove from heat. Combine the egg substitute and sugar in a mixing bowl, whisking to combine thoroughly. While continuing to whisk, slowly pour in the warm milk. Return the mixture to the saucepan over low heat. Cook for 3 to 4 minutes, stirring constantly, until barely thickened, just enough to lightly coat the back of the spoon. Pour into a bowl. Stir in the orange juice. Spread the crust evenly over the phyllo crust. Place the strawberries, hulled side down, into the custard. Put the jelly into a small, microwave-safe bowl and microwave at full power until melted, about 1 minute. (You can also melt the jelly by warming it an a small saucepan over low heat 2 to 3 minutes.) Spoon evenly over strawberries.
