California Avocado Bisque

3 cups milk
1 1/2 tablespoon tarragon, chopped, fresh, leaves
1 teaspoon salt
3 (1-1/2 pounds) avocados
2 tablespoons lemon juice, fresh
large pinch cayenne pepper
sour cream, for garnish

Combine the milk, tarragon, and salt and heat until simmering. Do not boil. Remove from the heat and set aside to cool at room temperature. Cover and refrigerate for 1 hour.

Meanwhile, peel and then puree the avocado with a fork or in a food processor. Stir with the lemon juice.

Whisk the avocado into the cooled milk. Stir in the cayenne, taste, and adjust the seasoning.

Chill for up to 2 hours and serve cold, or heat the soup just until simmering and serve.

Garnish each serving with a swirl of sour cream.
