Walnut Pesto Chicken with Sun-dried Tomatoes
An easy chicken recipe with crunchy walnuts and tangy sun-dried tomatoes that cooks up in minutes in a single skillet!

1 tablespoon butter
1 pound boneless, skinless chicken breasts, cut into bite-size pieces
1 medium onion, peeled, halved and thinly sliced
1 cup chicken broth
1/4 cup chopped sun-dried tomatoes (not oil packed)
2 tablespoons Mollie's Katzen's Walnut pesto (or pre-packaged pesto)
1/2 cup shredded Mozzarella or 1/4 cup Shredded Parmesan cheese
1/2 cup chopped, toasted California walnuts
Polenta or hot cooked pasta

Melt the butter in a large skillet over medium-high heat. Add the chicken and onion and cook for 10 minutes, stirring occasionally, until the chicken and onions are golden brown.

Add the broth, sun-dried tomatoes and pesto and reduce the heat to medium-low and simmer for 10 minutes or until the sauce is slightly reduced and the chicken is very tender.

Sprinkle with the cheese and walnuts; cover and cook for a few minutes more to melt the cheese. Serve over polenta or pasta, if desired.
