Mediterranean Steak Sandwiches
Great supper for a meal in a hurry, especially if you have already marinated or even cooked the steak.

Prep Time: 10 minutes
Cook Time: 16 to 21 minutes


2 teaspoons olive oil, plus more for drizzling
2 cloves garlic, crushed
1 teaspoon dried oregano
1/4 teaspoon pepper
One 1-pound boneless beef top sirloin
4 pita breads, warmed
1/4 cup crumbled feta cheese

Preheat the broiler or light a charcoal or gas grill so that the coals are medium hot to hot.

Whisk together the olive oil, garlic, oregano and pepper and press the mixture evenly into both sides of the steak. (If you prefer, you can do this step up to 8 hours before cooking. Cover and refrigerate the steak, if you do.)

Put the steak on a rack in the broiler pan or on the grilling rack so that the beef is 3 to 4 inches from the heat. Broil or grill for 15 to 18 minutes, depending on how thick it is, for medium-rare to medium. Turn once during cooking.

Carve the steak into thin slices; season with 1/2 teaspoon salt. Arrange equal amount of beef on top of each pita; top with the cheese.

Drizzle the sandwiches with a little more olive oil, if desired.

Note: You can broil or grill the steak ahead of time and make these sandwiches with cold or room temperature meat. Refrigerate the steak, without slicing it, until ready to use.

For an interesting variation top with Tomato Relish:

Combine the following:
1 cup chopped seeded tomato
1 can (2 1/4 oz.) sliced ripe olives, drained
1/3 cup chopped onion
2 tbsp. prepared Italian Dressing
