Chicken "Stir-Fry"
Try this easy delicious recipe from Campbell's Kitchen.

2 tbsp. cornstarch
1 can Swanson® Chicken Broth
1 tbsp. soy sauce
2 tbsp. Vegetable Oil
1 lb. skinless, Boneless Chicken breasts, cut into strips or skinless Chicken thighs
4 cups cut-up vegetables, *
1/2 tsp. ground ginger
1/8 tsp. garlic powder or 1 clove garlic, minced
4 cups hot cooked rice
toasted sliced almonds, for garnish

In a small bowl, mix cornstarch, broth and soy until smooth. Set aside.

In medium skillet over medium-high heat, heat half the oil. Add chicken in 2 batches and stir-fry until browned. Set chicken aside.

Reduce heat to medium. Add remaining oil. Add vegetables, ginger and garlic powder and stir-fry until tender-crisp.

Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Return chicken to pan and heat through. Serve over rice. Garnish with almonds.

*Use a combination of broccoli flowerets, green onions cut into 1-inch pieces, sliced celery, sliced carrots.
