Snow Peas & Wild Mushrooms with Ginger
This is an easy-to-make side dish. Add tofu or beans, serve with rice and you have a full meal.

1/2 teaspoon canola oil, (or sesame oil) or 3 cups mushrooms, Mixed(shiitake, chanterelles, oyster, etc.), sliced or 2 Tablespoons ginger root, peeled and sliced into 1/2-inch match sticks or 1/2 teaspoon ginger powder or 1/2 teaspoon cardamom, ground or 1 teaspoon cornstarch or 2 teaspoons rice vinegar or 1/2 teaspoon soy sauce, low-sodium or 3 cups snow peas, fresh or frozen or 15 ounces, canned baby corn

Heat a saute pan over medium-high heat and add oil. Saute mushrooms, ginger root, ginger powder, and cardamom for 2 minutes, stirring occasionally.

Dissolve corn starch in vinegar and soy sauce. Add corn starch mixture, snow peas and baby corn to saute. Heat 2-3 minutes. Remove from heat and serve. (Don’t over cook the vegetables.)
