This a real easy and tasty recipe. I usually serve this with some taquitos and guacamole. One time I mixed in some thinly sliced seasoned beef, not ground, but skirt steak or thin tri tip.

I made this dish using instant rice. It was easy and quick. The great part of this dish is that you control the heat - I used Medium salsa - it was just right for me. Looks and smells like the Mexican Rice you'd get in a fine restaurant.
